What is freeze-drying?

Freeze-drying is a method of preserving food by removing the water without heating it. The product is first frozen, then placed in a vacuum: the water passes directly from the ice to the steam (this is called sublimation).

Result: a dry, light product that retains its shape, taste and nutrients, and is easily rehydrated with a little water.

The domestic model is perfect for individuals, home chefs or small lab tests. It can process small quantities, is easy to use and takes up very little space. The more powerful SME freeze-dryer is designed for craftsmen, restaurants or small-scale production. It offers greater capacity, precise settings and near-industrial performance, while remaining compact and accessible.

Large-format freeze-dryers

These machines are designed for mass production: food processing, pharmaceuticals, cosmetics, etc. They can process from 50 to several hundred kilos per cycle, with perfect homogeneity and performance-optimised cycles. They require specific installations (technical room, three-phase power supply, fluid management, etc.).
